Such was the magical evening recently experienced at Valle , chef Roberto Alcocer's flagship restaurant in Oceanside, California, where Destilería Revés had a prominent role. The Baja California distillery not only participated in the event as a cocktail partner, but also positioned itself as a living expression of the masterfully reinvented Mexican spirit.
Along with renowned chefs such as Esteban Lluis (Michelin-starred Damiana) and Frida González (Aruba Day Drink Bar), the founders of Destilería Revés—Yocelyn Biancamano and Hans Backhoff—delivered a liquid offering that dazzled as much as the dishes on the menu. At the event, their whiskey distillate took center stage in creations such as the “Tijuana Salvaje,” with fruity, light, and bold notes, ideal for pairing with complex dishes such as king crab in a strained tamale or tuna with mole and grasshoppers.
